Sabudana Vada also called Sago Vada. This is deep fried traditional fasting food from Maharashtra. Sabudana Vada is the best option to have when fasting. Sabudana Vada is very easy to make with very few ingredients.




Ingredients:

1 1/2 Cup Soaked Sabudana
1 Medium Boiled Potato
1/2 Cup Roasted Peanut Crush
7 - 8 Finly Chopped Green Chilies
Salt to taste
Oil for deep frying


Method:
Wash Sabudana and soak it in 1/2 cups water for 5 - 6 hours.
Once Sabudana is soaked, take a bowl and add Soaked Sabudana + Peanut Crush + Boiled Potatoes. Add Salt as per your taste.
Mix well together and knead into the dough (If you want, you can add little water). Make the small balls with the mixture. Flatten them a bit and keep aside.
Heat sufficient oil in a Pan/ Kadai, and deep fry vadas till it becomes golden brown.




Serve hot with Curd!!





"Shengdanyachi Amti" or Peanut Curry  is a simple Maharashtrian curry that is made on fasting days.  This curry is made with roasted peanuts. Shengdanyachi Amti  is very easy to make and it needs only few ingredients. There are many ways to prepare Shengdanyachi Amti. Following is the method my mom use to prepare.





Ingredients:

1 Cup Peanuts
1 Small boiled Potato (optional)
3 - 4 Chopped Green Chillies
2 -3 Tablespoon Ghee
Salt as per your taste

Method:
Dry roast the Peanuts in a pan for 3 - 4 minutes. Once peanuts are roasted properly, turn off the heat and let them cool. Grind Peanuts coarsely. After that, heat ghee in a pan. Add green chili, boiled potato, and Peanut crush. Add 2 - 3 cups of water. Add Salt as per your taste.  You can add water as per your need.  If you want thick curry you can add less water.  Let it boil for 5 minutes.




After 5 Minutes turn off the heat and serve hot with Varai (Samo) Rice.







Sabudana Khichadi is an Indian dish made from Soaked Sabudana (Sago).  Sabudana Khichadi is a dish specially prepared during the fast(vrat/upwas) in Maharashtra.


Ingredients :

2 Cups Sabudana
1/2 Cup Peanut
4 - 5 Chopped Green Chillies
1 Medium boiled Potato

3 tablespoon oil
Salt to taste








Method :

Wash Sabudana and soak in half cup water for three to four hours.
Roast 1/2 Cup Peanuts and grind coarsely.
Heat oil in a pan. Once oil is hot, add chopped green chillies and saute it.
Add soaked Sabudana and Peanut crush together. Mix Well.
Add Boiled Potato.
Add salt as per your taste.
Saute this mixture for 8 to 10 minutes.
Sabudana Khichadi is ready.

Serve it hot.
